We are looking for a Culinary Operator: a leader who blends the creative soul of an artisan scratch kitchen with the logistical precision of a resort executive. Whether you are leading a high-intensity dinner service, managing complex labor relations, or engineering a menu that lowers food costs by 10%, you are the guardian of the "Aggressive Hospitality" that defines our 17,000-acre paradise.

The Impact You'll Make: Culinary & Operational Leadership

You are accountable for the overall success of daily kitchen operations, balancing high-level creative talent with rigorous financial and personnel management.

Key Responsibilities:



  • Operational Excellence: Supervise all kitchen areas and shift operations to ensure consistent, high-quality production across multiple outlets (Casual to Fine Dining) and high-volume banquet venues.
  • Team Development & Mentorship: Manage the "Full Lifecycle" of the culinary team. Act as a hands-on mentor, developing training programs for everyone from dishwashers to lead line cooks. Experience navigating both union and non-union environments to maintain a "food-good" culture is essential.
  • Service Flow Mastery: Command the line during peak hours. You will lead AM prep teams through meticulous staging and PM teams through high-octane services, ensuring every plate meets 4-Diamond presentation standards.
  • Strategic Menu Innovation: Develop seasonal a la carte menus and daily scratch features with a focus on innovation and dietary inclusivity (e.g., Paleo, Gluten-Free, Vegan).
  • Financial Stewardship: Manage the operating budget with surgical precision. You are responsible for inventory forecasting, menu costing, and labor optimization, with a proven ability to maintain food costs (target 25%) and maximize profitability.
  • Event & Banquet Execution: Oversee the logistics, preparation, and execution of high-profile weddings, corporate events, and festivals, ranging from delicate upscale plating to large-scale buffet service.
  • Compliance & Safety: Serve as a HACCP delegate and safety champion. Maintain strict compliance with all local, state, and federal (Health Department/OSHA) regulations.


What You Bring to the Team



  • The Pedigree: A 2-year culinary degree with 2 years of professional leadership, OR 4+ years in an upscale/high-volume leadership role. Experience in multi-unit resort management or high-revenue ($5M+) independent restaurants is highly preferred.
  • Technical Mastery: Expert knowledge of scratch-kitchen techniques, wood-fired cooking, and flavor profiling. Proficiency in Microsoft Word, Excel, and Agilysys (preferred).
  • The "Player-Coach" Mindset: A passion for hands-on training and the ability to solve complex operational problems under pressure while modeling professional behavior.
  • Logistical Fluency: Advanced skills in vendor management (local and national), labor scheduling, and end-of-night inventory reconciliation.


Requirements



  • Must be 18+ years of age.
  • ServSafe Manager Certificate and Food Handler's Certificate required.
  • Valid Driver's License and satisfactory MVR for resort insurability.
  • Physical ability to stand for long periods and lift up to 50 lbs.
