Overview

Summary: Under general supervision, leads and trains staff in maintaining cleanliness of kitchen work areas and restaurant equipment to ensure sanitation standards are met, and performs other work as required.

Distinguishing Features: This classification is responsible for the leading and training of Tennessee State Parks employees responsible for the cleanliness of kitchen work areas, restaurant equipment and utensils, refuse and recycling streams, and the loading dock area. Classification may also assist with basic food preparation, cooking, and set-up when needed. This classification differs from that of TSP Dishwasher in that an incumbent of the latter is not responsible for the training of others.

Responsibilities

  1. Clean and maintain all aspects of a culinary operation, including dining, kitchen and food service areas, refrigerators, dishwashing machines, garbage disposals, storage areas, food production equipment, pots, pans, and dishes, and other areas and items as needed.
  2. Responsible for the training and leading of the cleaning staff in a Tennessee State Parks restaurant or lounge.
  3. May routinely assist kitchen and restaurant staff in preparation by fetching, lifting, carrying, and performing other unskilled tasks.
  4. Performs a variety of set-up work in service-dining area such as cleaning and filling showcases with ice, filling and maintaining steam tables with water, placing containers of food in steam tables, displaying plated foods on line, making and filling coffee and tea urns, and filling juice and water urns.
  5. Works in pantry by portioning ingredients according to clearly written instructions; bags and places ingredients on carts for pick-up by cooks.
  6. Performs simple food preparation tasks such as beating simple toppings with whisk, grating cheese and other items; slicing lemons and other fruits; simple pureeing as directed; toasting bread, boiling or frying eggs, and/or grilling bacon and hamburgers.
  7. Serves food on the line and replenishes foods to place on the line as needed.
  8. Assist in the storage and inventory management of foodstuffs and other goods.
  9. Assist in the maintenance and upkeep of kitchen appliances and tools.
