We are currently hiring aR&D Brewer for Dogfish HeadinMilton, DE.
This role is responsible for making beer at the Dogfish Head Milton R&D Brewery, with emphasis on industry-leading safety and quality standards. This means you will join a team of dedicated, creative professionals who make the best beer in the US and are serious about doing it. - Executes brewing and packaging on 7-bbl R&D system for new product development, product
optimization/improvement and ingredient trials - Operation and routine maintenance of all brewing, processing, and packaging equipment
- Full ownership of assigned processing areas
- Adherence to all brewery safety and quality standards
- Maintenance of raw material inventory in collaboration with Operations team
- Occasional project work as assigned by Head Brewer or Brewing Manager
- Routine analytical lab work / in-process checks
- Accurate data collection, tracking, and analysis
- Participation in regular process review and troubleshooting
- Contribution to collaborative and individual recipe development as assigned
- Participation in daily sensory analysis panels
- Occasional forklifting / light shipping and receiving duties as needed
- Educates tasting room coworkers on attributes of new products
- Participates in supplier visits and ingredient evaluation as required
- Travel 5-10%
- Other duties as assigned
- Manage the ever-changing environment with customers arriving and leaving
- Ability to recognize and manage conflict
- Work overtime as needed which may require 12-hour days, weekends, and holidays
What Ingredients You'll Bring:
- 5+ years production brewery experience (> 20,000 bbls/yr)
- Thorough understanding of brewing process, brewing ingredients processing, use of flavorings and process aids
- Competent in all brewing functions related to raw materials, brewhouse, fermentation, aging, cold processing, packaging, and utilities
- Understanding of beer quality analytical and microbiological analysis and results interpretation
- Knowledge of GMP, HAACP and TTB/FDA regulations
- Computer: MS Office suite, Google Chrome
- Ability to flex schedule to meet operational demands
Physical Requirements:
- Ability to lift up to 60lbs, sometimes repeatedly throughout the workday
- Regular walking and standing for long periods of time (up to 11 hours a day) on concrete, metal and grated surfaces
- While performing the duties of this role, it may be required to climb flights of stairs, work from heights or on elevated platforms
- Agile enough to step over, crouch or crawl under
- Established dexterity to:
- Handle materials
- Operate equipment
- Interface with computer systems with precision
- Ability to pour, pick up a glass, deliver beverages to customers
- Ability to handle kitchen and service equipment
Preferred Qualifications:
- BS in Brewing Science, Food Science and Technology, Chemistry, Microbiology, Biochemistry, or Chemical Engineering (or related field)
- Product development in beverage alcohol at scale (>20,000 bbls)
- Comprehensive understanding of traditional & non-traditional brewing ingredients, their usage, effect on beer sensory attributes
- Formal sensory training (BBC, Aroxa, FlavorActiv) or Cicerone certification
- Experience with DOE, SPC and data interpretation
- ProLeit BrewMaxx automation platform operation and navigation
Level: 7 In accordance with pay transparency laws the pay rate for this role if hired is $24.28 - $48.08 per hour. However, it's important to note that where the person hired starts in this range is dependent on their related experience, skillset and location.
