Education and Work Experience:



  1. Education: High School Graduate or Equivalent, preference to applicants who have higher education training in nutritional education or professional training in nutritional cooking
  2. Work/Professional Experience: Five years of service in the food industry, preferably in the field of institutional cooking and/or nutrition forward cooking.


Scope of Position:

The Head Cook is responsible for oversight of the operation of the H.O.P.E. House kitchen, dining room and any staff or volunteers involved in the preparation and serving of food. They will ensure the availability of properly prepared nutritious food on a daily basis.

Knowledge, Skills and Abilities Required:



  1. Must be able to manage and control all aspects of the kitchen and dining room operations including inventories, menus, staff and volunteers
  2. Must have the ability to present oneself in a professional and appropriate manner
  3. Must have a current Food Handlers Card and Certification as required by the Health Department
  4. The ability to maintain confidentiality regarding information and documentation
  5. Must possess the culinary skill to prepare nutritious appetizing food
  6. Must have the ability to work with people of diverse backgrounds and circumstances
  7. The ability to interact with other staff members and the public in a positive manner
  8. They must be familiar with The Salvation Army's mission and local ministries
  9. Be able to represent the ideals of The Salvation Army in every aspect of his/her work
  10. Must possess the aptitude and knowledge to perform the specific duties and responsibilities as outlined in his/her job description


Essential Duties and Responsibilities:

Each employee of The Salvation Army, Medford Citadel Corps, is responsible for engaging with individuals without discrimination, upholding the mission of The Salvation Army to nurture and develop the spirit, soul, and body of each person we serve.



  1. Prepare or supervise the preparation of daily meals as scheduled
  2. Make optimum use of donated foods in the preparation of meals
  3. Plan and lead Nutritional and basic cooking classes for participants as program needs arise
  4. Break down or supervise the break down and cleaning of the steam table and other culinary equipment after meals
  5. Keep kitchen equipment neat, clean, and in good working order
  6. Clean or supervise the cleaning of the ovens, grill and stove each week
  7. Keep refrigerators and freezers clean and defrosted regularly
  8. Observe proper hygiene practices and obey all health and hygiene rules and regulations as mandated by controlling agencies in the preparation of food
  9. Make sure the kitchen is properly cleaned and secured in the evening, before leaving for the day
  10. Meet with the Operations Manager, as well as other related departments and agencies in planning food service program and activities
  11. Perform administrative requirements such as completing necessary forms and reports as prescribed by the Operations Manager
  12. Keep current inventory records of staple/non-staple foods, supplies and equipment
  13. Direct the storage of food and supplies as necessary
  14. Assure that there is an adequate inventory of food and supplies for the preparation of meals at all times
  15. Assist in the purchasing of food, supplies and equipment as required
  16. Transport food and supplies as required for the operation of the kitchen and dining room
  17. Plan and assist in food preparation of special meals as deemed necessary and appropriate, or as directed by the Operations Manager
  18. Prepare weekly and monthly menus for breakfast, lunch and dinner, and special events


Physical Requirements:

Must be able to operate kitchen and culinary equipment. The employee is regularly required to stand for long periods of time. Ability to stand and/or be physically active for up to two hours or more at a time. Must be able to walk, run, reach and grasp with hands and arms, lift, bend and stoop. The employee may occasionally lift or move up to 40 pounds or more. Requires lifting hot heavy objects and working with sharp tools. Some travel may be required. Must have a valid Oregon Driver's License and a good driving record. ((Note: Prior to employment, finalist will be required to provide a Certified Court Print of their driver record issued by the Department of Motor Vehicles.))

Working Conditions:

Works in a kitchen and dining room setting, both in cold and hot months.

Miscellaneous:

The Salvation Army does have a dress code. This will be shared with you at the time of employment.
